Buttermilk Scones Recipe Great For Afternoon Tea

Buttermilk Scones

This is a nice easy recipe with tasty results!

Ingredients

225g self raising flour

pinch of salt

75g soft butter or marg

40g golden caster sugar

1 beaten egg

2 tbsp buttermilk

Oven temp 220 C (200 fan)

Top Tip: If you brush the top with buttermilk before they go in the oven they will lightly brown.

Delicious with jam and clotted cream.

I love scones they are perfect for an english afternoon tea serve with sandwiches and cakes and lots of tea.

Going on a Fungi Foray soon

  • Fungi Foray

    I am taking my family on a fungi foray at National Trust property in a couple of weeks.

    It’s something I have fancied doing for ages and hadn’t got around to until now.

    Not quite sure what to expect. I’ve been told we will be taken around by a guide and shown any findings.

    I’ve had a look in my ‘Food for Free’ book, it’s a Collins Gem, it lists things in season by month so possible sightings are:
  • beefsteak fungus,
  • blewit,
  • cauliflower
  • fungus,
  • cep,
  • chanterelle,
  • fairy-ring
  • champignon,
  • field mushroom,
  • giant puffball,
  • hedgehog fungus,
  • honey fungus,
  • horse mushroom,
  • jew’s ear,
  • oyster mushroom,
  • parasol mushroom,
  • saffron milk cap,
  • shaggy cap
  • velvet shank.

Wow, its an exhausting list! I am hoping we will be told what we can eat and which ones to avoid!

I will be taking my camera along and will let you know what we find…….

Yummy Lemon Drizzle Loaf Cake Recipe Easy!

This is such a nice easy recipe to do. Ideal to take along as a gift or when friends visit.

Will keep for about a week (doubt it will last that long though!).

Ingredients are marg/butter, caster sugar, self raising flour all 175g each. Zest of one lemon. 3 eggs. 1 tsp baking powder. pinch of salt. For the topping syrup 125g granulated sugar and juice of one lemon (about 60ml).

Works well with oranges or limes but I reckon lemons are best!

How to cook Mushrooms in a garlic and herb sauce


Mushrooms with a garlic and herb source make a delicious starter. Its easy to cook and smells as good as it tastes.

You can use any type of mushroom really, but I prefer the large open or portabella. Add more or less herbs to vary the flavour.

This is a very 'forgiving' recipe, no stress and the gorgeous aroma will get your tastebuds going!

How to cook Mozzarella in Carrozza

If you're looking for a tasty starter that's both quick and simple to make then Mozzarella in Carrozza could be just what you're after. This delicious appetiser can be prepared in advanced and cooks in about five minutes using basic cooking ingredients and a little kitchen know how.

This is one of my favourite starter dishes to cook. I first had this in an italian restaurant and loved it so much I thought I would try and re-create it at home!

To have a go yourself you only need a few ingredients the essential one being mozzarella, a 125g bag will serve 2-3 people. A small amount of plain flour (seasoned with a little salt) to coat with, one large egg and some breadcrumbs. This is an ideal time to use up those stale last slices of bread, just grate or blend them.

Follow the video directions and store in the fridge. These are great for a dinner party as they can be prepared in advanced. Fry in sunflower oil until golden brown. I like these with a passata, a smooth tomato sauce and a few basil leaves.
